Older cold potatoes work better than freshly cooked ones. Dry adding some Caraway seeds. Not too many. It gives it a nutty flavor. Or if you like liverwurst, add a chunk.it melts and coats the potatoes.

My mom came over from Germany when I was just a few months old. She always made fried potatoes… with hot dogs or with eggs… potatoes all the time!!! I never, however, thought of tossing them with eggs; gotta try that. I usually start with a tbsp., or so, of Crisco. Then I slowly render 8 slices, or so, of thick cut bacon that’s been diced. I remove the bacon and set aside for later use, and then cook the rest of the ingredients. I then toss the cooked bacon along with the other ingredients just before plating. I do have to try the egg thing. Thank you. God bless.
