Our family favorite is a Chocolate Glazed Amaretto Cheesecake. This recipe requires 2 Pkgs. of cream cheese, l can condensed milk, 2 Eggs, 1/4 Cup Amaretto liquour, and 1 Tsp. of Almond flavouring. The base is made of Graham cracker crumbs, either plain or chocolate, (1-1/2 cups) and 1/4 Cup melted butter. Chocolate glaze is made from 1/2 Cup warmed whipping cream and 8 Ozs. of Bakers semi-sweet chocolate. I finish off the cheesecake with toasted sliced almonds. Use the usual procedure of preparing the ingredients and then bake at 325 degrees for approx. 40 mins. Place pan of hot water on rack under cheesecake. This helps to keep the cake from cracking. When baked, turn heat off immediately and open oven door slightly to allow gradual cooling. Once cooled prepare chocolate glaze. Add the chocolate to the warm whipping cream and stir until chocolate is melted. Then spread over cheesecake and add toasted almonds.
