
This Boston cream Pie is a recipe we have had for some time! We have always loved Boston Cream Pies and donuts from the deli’s! If I stop in the deli, the first thing I look for is the Boston Cream Pie and many time they will already be sold out! This seems to be a favorite of lots of folks! Chocolate and cream just can’t be beat! Love, love, love it! Grab ya a napkin, you will get it on your chin if ya aren’t careful! 🙂
This Boston Cream Pie is actually made from cake. I know, I know, it says Boston Cream Pie but they all have cake in them! I can’t help it! That is just the way it is! 🙂
Ingredients for: Boston Cream Pie
Cake Ingredients: Boston Cream Pie
- 3 large eggs, separated
- 1 Teaspoon vanilla extract
- 1 Cup granulated sugar
- Pinch if salt
- 3/4 Cup cake flour
Filling Ingredients: Boston Cream Pie
- 1/2 Cup granulated sugar
- 1/4 Cup all-purpose flour
- 1 1/2 Cup milk
- 6 Large egg yolks
- 2 Teaspoons vanilla extract
- pinch of salt
Glaze ingredients: Boston Cream Pie
- 1/2 Cup granulated Sugar
- 3 Tablespoons light corn syrup
- 2 Tablespoons water
- 4 oz of semisweet chocolate, coarsely chopped. ( 4 squares)
Directions for: Boston Cream Pie
- Preheat oven to 350* F, grease a 9″ round cake pan and line with wax paper.
- Beat together egg yolks and vanilla at medium speed blended. Beat in half of sugar until very thick and pale.
- Clean and dry your beaters and beat together egg whites and sat at medium speed until very soft peaks form. Gradually beat in remaining sugar until stiff, but not dry peaks form.
- Fold yolk mixture into egg whites. Stir flour over mixture and fold in gently. Do not over mix. Pour batter into 9″ round pan prepared with wax paper.
- Bake cake until top springs back when lightly pressed, approx 25 minutes. Loosen the cake by running a spatula around the sides of the pan. Place cake on wire rack to cool. leave wax paper on cake for now.
- Prepare filling. In a saucepan mix sugar and flour gradually whisk in milk, egg yolks, vanilla and salt. Bring to a boil over medium heat and boil for 1 minute while whisking constantly. Strain through a fine sieve into a bowl. Cover with plastic wrap and chill for 30 minutes.
- Use a serrated knife, cut your cake horizontally in half. Carefully remove the wax paper. Place bottom half of cake on a serving plate. Spread filling evenly over cake. Top with the remaining cake layer.
- Prepare glaze. In a saucepan bring sugar, corn syrup and water to a boil over low heat. Stir constantly until sugar has dissolved. Remove from heat and add your chocolate. Let this stand for one minute then whisk until smooth. Gently pour glaze over cake allowing it to drip down sides. Let the cake sit until the glaze is set!
Note: You can use any chocolate you like. Whatever your favorite is, use it!
Remember, a Boston Cream Pie can spoil fairly easy so be sure to store what you don’t eat in the refrigerator.
