This is a Chicken and Dumplings recipe I put together using two old recipes I found in a very old cook book.
I found this to be very tasty but the drop dumplings were a little big.
So, the next time I make drop dumplings, I will use a smaller spoon, probably a teaspoon would work better?
My wife did not care for the drop dumplings so next time I make this I will roll out the dumplings and cut them into thin strips. After comparing these drop dumplings, thin strips how she said she likes them best.
Make them according to your taste. I like them both ways. I was raised on drop dumplings for years.
My mother did start rolling them out in strips as we got older and I liked them also!
Ingredients for Chicken and Dumplings:
1/4 cup - Real butter (Three to four tablespoons)
8 - Chicken tenders (a little over a pound of chicken breast)
3 - Chicken thighs (or other bone-in, skin-on chicken pieces)
1 tablespoon - Real lemon juice
1 tablespoon - Real honey
1 - Whole chopped onion (about 1 1/4 onion)
Salt & pepper
3 cups - Water
Directions:
Add butter and melt over medium heat, add chicken and brown.
Add other ingredients and simmer over medium heat for approx. 30 minutes or until chicken is done.
Remove chicken and shred and put aside to back into the kettle after the dumplings are finished.
Ingredients for Dumplings
1 1/2 cups - All purpose flour
1 - Heaping tablespoon baking powder
1/2 teaspoon salt
3/4 cup - Milk
Directions for Dumplings.
Add all dry ingredients and mix well.
Add milk and mix vigorously until mix is damp.
Add to the chicken pot one spoonful at a time.
Cover and steam for another 10 - 12 minutes.
