Jumbo Blueberry Muffins Homemade from Scratch Recipe

Blueberry MuffinsWell, here is a recipe for Jumbo Blueberry Muffins I found in a Taste of Home Magazine and I Just have to share them with you. This is such a good recipe that I am going to have to give it a try also! The topping (optional) gives this it’s little extra flavor and adds to the whole muffin!  Yummy, yum, what a way to start off the day. Blueberry Muffin with a little butter on top and a glass of milk or good morning coffee!

Ingredients for: Blueberry Muffins

  • 1/2 Cup butter, softened
  • 1 Cup sugar
  • 2 Eggs
  • 1/2 Cup buttermilk
  • 1 Tsp Vanilla extract
  • 2 Cup all-purpose flour
  • 2 Tsp Baking powder
  • 1/4 Tsp salt
  • 2 Cups fresh or frozen blueberries (Fresh is always better)

Topping for: Blueberry Muffins (This is optional)

  • 3 Tbsp sugar
  • 1/8 Tsp ground cinnamon
  • 1/8 Tsp ground nutmeg

Directions for: Blueberry Muffins

  1. Preheat oven to 400*
  2. In a large bowl cream sugar, and butter until light and fluffy. Add eggs one at a time beating well after each egg is added.
  3. Beat in buttermilk and vanilla.
  4. In another bowl whisk flour, baking powder and salt.
  5. Add to cream mixture and stir just until moistened and then fold in blueberries.
  6. Fill greased or paper lined jumbo muffin cups two-thirds full.
  7. Mix topping ingredients and sprinkle over top.
  8. Bake 20-25 minutes or until a toothpick inserted comes out clean.
  9. Cool for 5 minutes before removing from pan.
