Butter Baked Summer Squash and Zucchini Recipe

Baked Zucchini

We have been trying to make as many dishes as we can from our Summer Squash and Zucchini. This Butter Baked Summer Squash and Zucchini Recipe is a keeper! I actually got this idea from a recipe I found for baking fish! Amazing how so much stuff can be used in with so many different items.

Contrary to the title it is still a very low fat meal!

Ingredients for: Butter Baked Summer Squash and Zucchini

  • 9 x 8 Baking Dish
  • 1-2 Medium Summer Squash (Squash of choice)
  • 1-medium Zucchini
  • 1/2 of a Red onion sliced lengthwise
  • 2 Tbsp butter
  • Salt
  • Lemon Pepper

Directions for: Butter Baked Summer Squash and Zucchini

  1. Line the Baking Dish with foil.
  2. Preheat oven to 375*
  3. In a small bowl melt butter and add salt and lemon pepper to taste. (You can use other spices as you wish. You can substitute white wine vinegar etc for the butter)
  4. Cut Squash and Zucchini into 1/4″ disk.
  5. Apply 1/2 of the butter mix to bottom of Baking Dish
  6. Put vegetables in dish and mix as you go.
  7. Sprinkle remaining butter mix over vegetables. I added a little extra Garlic Salt! I like Garlic!
  8. Bake for approx 15 minutes or until Zucchini is soft enough to insert fork easily.

You can make as big a batch of this as you want. Just adjust the ingredients and bake time!
