CHOCOLATE CARROT CAKE

Well, This Chocolate Carrot Cake is a favorite for many. I am not a big fan of Carrot Cakes but since many of you are I thought I would share this someones favorite recipe with you. This has so many good things I like such as, chocolate, Cream Cheese and Chocolate glaze in it I will not doubt have to try this one and see if I like it better than the last one I tried.  Ingredients for: Chocolate Carrot Cake

Layers:

  • 2 – Cups all-purpose flour
  • 2 – Cups granulated sugar
  • 1/3 Cup unsweetened cocoa powder (Brand of Choice)
  • 1 – Tsp salt
  • 1 – Tsp baking powder
  • 1 – Tsp baking soda
  • 4 – Large eggs
  • 1 1/2 Cups vegetable oil
  • 4 – medium carrots, shredded coarse (approx 2 cups)
  • Cream cheese frosting for: Chocolate Carrot Cake
  • 4 – Oz cream cheese, (Softened to room temp)
  • 2 – Tbsp unsalted butter, (Softened)
  • 1 – Tbsp vanilla
  • 1/2 Cup confectioners or powdered sugar

Chocolate glaze:

  • 1/2 Cup semisweet chocolate chips (Brand of Choice) We like Hersheys.
  • 3 – Oz fine-quality BITTERSWEET chocolate (Your brand) We like Hersheys. (not unsweetened)
  • 6 – Tbsp heavy cream
  • 1 – Tbsp unsalted butter
  • 1/2 Tsp vanilla extract
  • 1 – Cup confectioners or powdered sugar

 

Directions for: Chocolate Carrot Cake

Cake Layers:

  1. Preheat the oven to 350F
  2. Grease and flour two 9 by 2-inch round cake pans, remove excess flour.
  3. Sift together flour, sugar, cocoa powder, salt, baking soda and baking powder into a large bowl.
  4. Beat together eggs and oil on low speed until combined well in a large bowl with an electric mixer.
  5. Add flour mixture and beat until just combined, don’t over mix.
  6. Stir in the carrots and divide the batter between the two pans.
  7. Bake for 35 to 50 minutes, or until toothpick inserted in middle comes out clean.
  8. Cool on a wire rack 10 minutes then move cakes onto rack to cool completely.

Cream Cheese Frosting:

  1. With an electric mixer, beat together cream cheese and butter until smooth.
  2. Add vanilla and confectioners sugar and beat until creamy.
  3. Spread cream cheese frosting on top of 1 cake layer and top with the other cake layer

Chocolate Glaze:

  1. In a small to medium saucepan combine glaze ingredients and cook over medium heat, stirring frequently, until chocolate is melted and glaze is smooth.
  2. Remove from the heat and let glaze cool slightly.
  3. Spread glaze over top and sides of cake and chill 1 hour, or until set.
  4. Recipe serves 6 to 8.
