Making Cheesy Hashbrown Casserole

I can still remember when my mother would make hashbrowns. Although it was nothing to compare to this Cheesy Hashbrown Casserole it was always a dish I loved with cheese over them. They were so good with our meals. This Cheesy Hashbrown Casserole is great with pretty much any meal you like potatoes with.

Most casseroles are so forgiving, if you make an error on amounts. Some casseroles are so flexible you can add or subtract your favorite vegetables or just none at all. This Cheesy Hashbrown Casserole is one of those that you can add your favorite items to. You do not have to follow a strict recipe in order to have a delicious dish!

We love hashbrowns and potatoes here and we just love trying new stuff. This is going to be a recipe that we will keep around for a long time. Great for any meal including breakfast! Yes you can even alter it for breakfast. Just be creative and see where this Cheesy Hashbrown Casserole takes you!

Ingredients for: Cheesy Hashbrown Casserole

This recipe is for a 9 x 13 Dish.

  • 1 package of frozen hashbrowns 30oz, We like Ore Ida.
  • 1 can of cream of chicken soup (If you prefer cream of mushroom, knock yourself out!)
  • 1 can of milk (just use the empty soup can full of milk)
  • 1/2 onion chopped (this is optional) – We love onions and bell peppers.
  • 2 – 3 cups of shredded cheddar cheese (Or cheese of your choice)
  • 1 (8 ounce) container sour cream (You can use half a can if you want to)

NOTE: Hashbrowns can be shredded or prepackaged with peppers,etc. We love onions and bell peppers. You can add red peppers, sausage, bacon, etc. This can be made to taste. The cheese is the kicker for me. Add your favorite!

Directions for: Cheesy Hashbrown Casserole

  1. Preheat oven to 350 degrees F.
  2. Spray a 9 x 13 Casserole pan with nonstick spray.
  3. Break up the frozen hashbrowns in the bag.
  4. Combine the onion and or whatever else you have decided to include, 1 or 2 cups of cheese, the milk, and the cream of chicken soup or cream of mushroom soup.
  5. Stir and combine well.
  6. Mix in the hasbhrowns and stir to coat well.
  7. Pour this mix into your 9×13 pan.
  8. Top with the remaining cheese. (Add a little extra if you want to)
  9. Bake covered with foil in your 9 x 13 casserole dish in a preheated oven for 40 -50 minutes.
  10. If you want the cheese nice and brown, take the foil off for the last 10 or 15 minutes.
  11. Serve warm with any dish of choice.

No peeling and slicing or dicing potatoes, just add your hashbrowns and ingredients and put her in the oven! What a great dish. This is handy for any occasion or holiday! This can actually be prepped ahead of time and put in the refrigerator to cook later.
