Lemon Cheesecake Bars 1

Lemon Cheesecake Bars Recipe has become another recipe I have added to my collection! I loved the Lemon Bars we made last time and found this recipe for a Lemon Cheesecake Bars! Well, to say I like it will be correct! Lemon is a favorite of mine and if you don’t mind I am going to add a little chocolate to top my piece off! I like Chocolate also! This would also be good sprinkled with powdered sugar. 🙂

 Ingredients for Crust: Lemon Cheesecake Bars

Bottom Crust for: Lemon Cheesecake Bars

  • 1 cup butter, softened
  • 1⁄2 cup white sugar
  • 2 cup all-purpose flour

Lemon Filling for: Lemon Cheesecake Bars

  • 4 egg
  • 1 1⁄2 cup white sugar
  • 1⁄4 cup all-purpose flour
  • 2 lemon, juiced (Approx 6 tablespoons juice)

Cream Cheese Mix for: Lemon Cheesecake Bars

  • 8oz Cream Cheese (Softened to room temp)
  • 1/2 Cup Sugar
  • 1 Egg
  • 1/2 Tsp Vanilla

Directions for: Lemon Cheesecake Bars

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9×13 inch pan.
  3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.
  4. In another bowl mix cream cheese and sugar until smooth then add 1 egg and vanilla and mix until smooth.
  5. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice.
  6. When Crust is done, pour Cream Cheese mix over crust, then pour lemon mix on top of this.
  7. Bake for an additional 35-40 minutes in the preheated oven.

After this cools down refrigerate to keep fresh and firm.

You can add any topping you like that taste good with lemon.

The bars will firm up as they cool. For a festive tray.
