Roasted Broccoli Salad

This is a simple but yet delicious recipe for Roasted Broccoli Salad! The flavors are wonderful and it is a very healthy meal! We love Chicken and even better, we love it in salads! The roasted broccoli makes this such a tasty meal! Of course, you can use your own special dressing if you choose. This is just a suggestion and I know there are others out there that would be just a good!

You can adjust this recipe for ever how many people you want to serve. this recipe serves approx 4 people.

Ingredients for: Roasted Broccoli Salad

  • 2 -4 Boneless Chicken Breast, baked or diced and fried in olive oil in skillet. (1 Breast per person)
  • 12-14 halved grape tomatoes
  • 5 Cups roasted broccoli
  • lots of fresh basil

Dressing for: Roasted Broccoli Salad

  • 1/3 cup roasted peppers, pureed
  • 2 tablespoons cider vinegar
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil

Directions for: Roasted Broccoli Salad

  1. Bake in oven or cook in chicken in a skillet with olive oil. (Drain any oil, Set aside)
  2. Toss the broccoli and cut up onions in olive oil, spreading on a baking sheet and roasting at 425 degree in the oven for about 20 minutes. If you don’t have convection roast, flip once.
  3. Slice Tomatoes just before serving.
  4. Whisk together the ingredients for the dressing, and toss everything together.
