The Best Chocolate Eclairs Recipe

I have always had an affection for Chocolate and these Chocolate Eclairs just increases this affection! Something about all these flavors together covered in chocolate is sooooo good! Eclairs are just so tasty and when fresh they are just so soft and the texture is wonderful! I have to be careful when I find these fresh because I am one of those people who cannot eat just one of the things I love best! 🙂
Ingredients for Chocolate Eclairs:
- 1/2 Cup butter (1Stick)
- 1 – Cup of water
- 1 – Cup of flour
- 1/4 tsp. salt
- 4 – large eggs (Farm fresh is always best if you can get them.)
It makes my mouth water just thinking about these delicious Eclairs! You might want to make two batches and put one in the refrigerator for later! 🙂
Directions for Chocolate Eclairs:
- Preheat the oven to 450 degrees.
- Lightly grease a large cookie sheet, set aside.
- In medium saucepan, combine 1/2 cup of butter and water.
- Bring the butter and water to a boil, stirring to melt the butter.
- Reduce heat to low, stir in the flour and salt with a wooden spoon until the mixture begins to form a stiff ball of dough.
- Remove from the heat of the stove and add eggs. Do this one at a time and stir vigorously after each egg addition to make sure they are incorporated well.
- Note: Work quickly, especially with the first egg, or it could turn into scrambled eggs on the bottom of your warm pan.
- With a spoon or pastry bag fitted with a large tip, spread or pipe the thick dough onto a prepared cookie sheet into 10-12 strips approximately 1 1/2 x 4? each. You can use a large Ziploc bag and cut off a little of the corner.
- Put into the oven and bake this for 15 minutes, then reduce the heat to 325 and bake another 20 minutes, they should be puffed and golden and hollow sounding when lightly tapped on the bottom. If you under cook them, they will flatten out.
- Note: When removed from oven, IMMEDIATELY pierce the ends almost through to the other side with a sharp knife to let steam escape and prevent any sogginess in the middle. This hole is also where you will be piping your filling into.
- Let them cool completely before filling and icing (this usually takes about half an hour).

This is soo good. I love custard and all that gooey stuff! I think I just love sweets! We eat a lot of em’ here at Back Roads Living. This is going to make us have to start walking again! 😉
Custard Filling for Chocolate Eclairs:
- 1 – 3.4oz (4 ½ Cup serving size) package instant vanilla pudding mix
- 2 – Cups milk (as called for on pudding package)
- 1 – Cup heavy cream
- 1/4 cup of powdered sugar
- 1 – Teaspoon of vanilla extract (Use you choice of flavor if you want a different flavor)
- A dash of salt
Custard directions for Chocolate Eclairs
- In a bowl prepare pudding according to package directions. (Let the pudding set in the the fridge about 10 min)
- In a separate bowl, beat the cream with an electric mixer until soft peaks form.
- Beat in 1/4 cup sugar, 1 tsp vanilla, and the dash of salt.
- Fold the whipped cream gently into the pudding.
- Scoop this mixture into a pastry bag fitted with a small tip and pipe mixture into the centers of eclairs until full.
- This part can be a little messy but who cares? You will no doubt have a little cream left over. Now, what to do with this extra cream? I know, lets just put it in the fridge and use it on a later project or snack on it from time to time. 🙂
For the Chocolate Icing:
- 1/3 cup semisweet chocolate chips (or 2 oz – Semisweet chocolate)
- 2 – Tablespoons butter
- 1 – Cup of powdered sugar
- 1 – Teaspoon vanilla extract
- 3 – Tablespoon of hot water
Directions for Chocolate Icing:
- In a saucepan, over low heat, melt the chocolate and 2 Tbsp butter.
- After chocolate is melted, stir in 1 cup powdered sugar and 1 tsp vanilla.
- Note: Stir in the hot water, 1 Tbsp at a time, until icing is smooth and reaches desired consistency.
- Drizzle, pipe or spread over filled eclairs.( Do this anyway that pleases you. You can eve ndip them into the chocolate if you want to. There is no right or wrong way)
- Put these in the fridge until set, then serve.
