Diabetic Sweet Potato Pie

A Delicious Diabetic Sweet Potato Pie Recipe from Back Roads Living

This is a delicious Diabetic friendly pie. We all have friends that are diabetic and this is a terrific pie to recommend. Diabetic Sweet Potato Pie from Back Roads Living.

These are really good when making them fresh form the garden. Of course we all know garden fresh produce is best for us but even throughout the winter these are good with your store bought taters! 🙂

Ingredients for: Diabetic Sweet Potato Pie

  • 1/4 cup margarine
  • sugar substitute equal to 1/4 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • 3 large mashed sweet potatoes, cooked
  • 1 cup milk
  • 1 egg yolk
  • 1/4 teaspoon cinnamon
  • 3 egg whites
  • 1 Basic 9” Pie Crust (unbaked)

 Directions for: Diabetic Sweet Potato Pie

  1. Beat together margarine, sugar substitute and salt.
  2. Mix in egg yolk, lemon juice, lemon zest and cinnamon.
  3. Mix in mashed sweet potatoes and milk.
  4. Fold in beaten egg whites.
  5. Bake @ 350 Degrees for 45-55 minutes or until done.
