If you are looking for a way to make Easy Pumpkin Muffins, you have come to the right place. I know, I know, many of you are detested when you read something like this. You will only make this kind of stuff from scratch!
My mother always made everything from scratch, gravy and biscuits, breads, dumplings, candies, cakes, etc.. It was always a labor of love and we all appreciated it so much. Her cooking and baking was the best and still is.
There comes a time when you just do not have the time or resources to do a cake, pie, or muffins from scratch and I figure it is ok to use a shortcut from time to time as long as the finished product has a good end. Sometimes folks are just too tired from a long day or week of working to scratch it together. This Easy Pumpkin Muffins recipe is one of those with a good end!
The thing about this muffin mix is that there is so much you can do with it. The possibilities are wonderful!
I love nuts, especially pecansand walnuts! You can add a few nuts of your choice if you are nut lover like I am. Add 1/2 cup of nuts to the pumpkin batter and fold this in before baking.
Oh, I love chocolate. Lets make some and add a few sweet chocolate chips to the mix.. Yummy.. Add 1/2 cup of the chips to the batter and fold in before baking.
Lets make a cream cheese frosting and put it on top of this wonderful muffin! I love cream cheese and pumpkin anything! If you like cinnamon you can add a little to your cream cheese mix… Oh, so good! Frosting recipe below.
We can also make some streusel topping for the pumpkin muffins using a combination with brown sugar in it!! This is so good you are going to just love it! I will post the recipe for this below..
A note about these muffins, If you make more than you can eat, do not worry. These easy pumpkin muffins will keep for around 3 days at room temperature if covered. You can keep them for around 5 days if refrigerated. They also freeze easily and will keep for you that way.. You can make as many as you want ahead but I love them warm and fresh right out of the oven best.
You will need a electric mixer and bowl for the frosting.

I just love Streusel topping. This is wonderful through the holidays! It just adds to the flavor of the season! The later in the fall it gets the more we want spicy and cinnamony things! This stuff is always better served fresh and warm!
