Homemade Strawberry Cake

I love a good Homemade Strawberry Cake but my favorite is with Chocolate Cake and Cream Cheese Frosting!

I still remember when I was a kid, my grandmother had a wonderful strawberry patch behind her house in the upper end of her garden. this was the place to find me and my cousin when strawberries were coming in (Ripening).

We would go there daily and pick enough of the strawberries to fill a bowland bring them back to granny’s house and there she would rinse them, put a little sugar in them and a little milk. Gosh, I can still taste those berries now! I know, I can still fix a bowl of them but it just doesn’t seem the same as when she fixed them for us! I guess a little love goes a long way.

This strawberries also made some of the best pies I ever ate! She would get fresh Rhubarb sometimes and mix with the strawberries when she baked the pies!! Oh my, those were the days of youth and happiness without a care in this world! Our only concern was how soon those pies would come out of the oven and cool enough for us to eat!

We still still enjoy strawberries and I really like homemade strawberry cakes when I use the chocolate cake mix with them.. We bake chocolate cake and cut up fresh strawberries and make homemade cream cheese frosting!! This is so good!

Go ahead and give it a try, I bet you are going to like it!!

Ingredients for Homemade Strawberry Cake

First we need to make a Chocolate Layer Cake! I know, this is the start of something very good! All of us chocolate lovers are now beginning to lick our lips in anticipation! Strawberries and Chocolate!  Ok, time to get the Electric Mixer, Good Grips 3-Piece Mixing Bowl Set, cake pans and ingredients together.

Ingredients for Homemade Strawberry Cake

See Note Below Ingredients if you don’t have time for Homemade from scratch.

  • 1 and 3/4 – Cups of all-purpose flour (You can sift this)
  • 1 and 3/4 – Cups of granulated sugar
  • 3/4 – Cup unsweetened cocoa powder (not dutch processed)
  • 1 – Tsp of baking powder
  • 2 – Tsp of baking soda
  • 1 – Tsp of salt
  • 1 – Cup buttermilk* (See note below to make your own)
  • 1/2 Cupvegetable oil(Your choice of oil, you can also use, canola or coconut)
  • 2 – large eggs, at room temperature (See note below)
  • 1 – Tsp of vanilla extract
  • 1 – Cup freshly brewed strong hot coffee (If you have any coffee left over, enjoy it while the cake is baking)
  • 1 – Large package of Strawberries
  • 1 – Small Package of Strawberry Glaze

Note for Buttermilk: (using 1 Tablespoon of lemon juice or white vinegar in a measuring glass. Fill the remainder of the cup up with milk measuring 1 cup. You can use 1%, 2%, or whole milk. Stir good and let sit for 5 minutes.)

Note: (You can us a box of Moist Cake Mix per the baking directions.)

Directions for the Homemade Strawberry Cake

  1. Preheat your oven to 350F degrees. Spray with nonstick cooking spray or butter & flour 2, 9″ round cake pans.
  2. In a medium sized mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt . Set his aside.
  3. In a large bowl, using a handheld or stand mixer set on high speed, mix the buttermilk, oil, room temperature eggs, and vanilla until combined.
  4. With the mixer on low, Slowly add the dry ingredients to the wet ingredients .
  5. Add the coffee.
  6. The batter is going to be VERY thin. This is how it is supposed to be.
  7. Pour the batter into the ready cake pans and bake for 23-27 minutes or until a toothpick inserted in the center comes out clean.
  8. This should take around 22 – 25 minutes depending on your oven.

While the Cake is baking you can make your Cream Cheese Frosting for it!

For frosting the cake, See the NOTE below.

Ingredients for the Cream Cheese Frosting

  • 1 (8 ounce) package cream cheese, softened
  • ½ cup white sugar
  • 2 tsp pure vanilla extract
  • 2 c heavy cream

Directions for the Cream Cheese Frosting

  1. In a large mixing bowl add the cream cheese, sugar, and vanilla extract and mix on medium speed until smooth.
  2. Slowly pour in the heavy cream as you are mixing this.
  3. Be sure to scrape the bottom of the bowl a couple of times as you are whipping until the cream can hold a good stiff peak.
  4. Now lets slice the Strawberries. We sliced them in three parts lengthwise.
  5. First always rinse them well and clip any bad ends and cut any soft spots out.
  6. We applied the cream cheese frosting to the bottom cake layer and added the strawberry slices in a circle and continuing a circle inside a circle until we reached the center.. This only took a couple of circles! 🙂
  7. Add the top cake and apply the frosting on top.
  8. If you plan to frost the sides also, do that now, so the cake will be in place when you top with strawberries. (It may want to move on the strawberries beneath it)
  9. Now, after you are finished with the frosting, add the strawberries on top.
  10. If you like, you can garnish with your Strawberry Glaze!

We always have a few strawberries left that I pitch in any left over frosting, mix together and eat. (Oh so good)

Note: Allow the two cakes to cool over a wire rack for at least 10 minutes, remove from pans. Allow to cool for an for at least an additional 15 minutes before trying to add the frosting.

* This cake is best refrigerated after serving if you have any left.  This keeps the strawberries fresher longer*.
