Making Easy Pumpkin Muffins.

If you are looking for a way to make Easy Pumpkin Muffins, you have come to the right place. I know, I know, many of you are detested when you read something like this. You will only make this kind of stuff from scratch!

My mother always made everything from scratch, gravy and biscuits, breads, dumplings, candies, cakes, etc.. It was always a labor of love and we all appreciated it so much. Her cooking and baking was the best and still is.

There comes a time when you just do not have the time or resources to do a cake, pie, or muffins from scratch and I figure it is ok to use a shortcut from time to time as long as the finished product has a good end. Sometimes folks are just too tired from a long day or week of working to scratch it together. This Easy Pumpkin Muffins recipe is one of those with a good end!

The thing about this muffin mix is that there is so much you can do with it. The possibilities are wonderful!

I love nuts, especially pecansand walnuts! You can add a few nuts of your choice if you are nut lover like I am. Add 1/2 cup of nuts to the pumpkin batter and fold this in before baking.

Oh, I love chocolate. Lets make some and add a few sweet chocolate chips to the mix.. Yummy.. Add 1/2 cup of the chips to the batter and fold in before baking.

Lets make a cream cheese frosting and put it on top of this wonderful muffin! I love cream cheese and pumpkin anything! If you like cinnamon you can add a little to your cream cheese mix… Oh, so good! Frosting recipe below.

We can also make some streusel topping for the pumpkin muffins using a combination with brown sugar in it!! This is so good you are going to just love it! I will post the recipe for this below..

A note about these muffins, If you make more than you can eat, do not worry. These easy pumpkin muffins will keep for around 3 days at room temperature if covered. You can keep them for around 5 days if refrigerated. They also freeze easily and will keep for you that way.. You can make as many as you want ahead but I love them warm and fresh right out of the oven best.

Preparation of ingredients for Easy Pumpkin Muffins

  1. First, preheat the oven to 350 degrees
  2. Mix the cake mix and can of pumpkin together
  3. Line the muffin pan with paper inserts or spray with non stick spray
  4. Add the mix evenly in your pan.
  5. Bake in preheated oven for 18 – 20 minutes.
  6. Watch it close and don’t over bake.
  7. When they brown on top, they are done.
  8. You can always use the toothpick method. Insert and when it comes out clean they are done.

You will need a electric mixer and bowl for the frosting.

Ingredients for Cream Cheese Frosting

  • 1/2 Cup – butter, (room temperature)
  • 8 ounces – Cream cheese, (room temperature)
  • 16 ounces – powdered sugar
  • 1 teaspoon vanilla

Directions for Cream Cheese Frosting

Easy Pumpkin Muffins

  1. In your bowl add the cream cheese and butter and using an electric mixer, mix at medium speed to get a good texture.
  2. Lower the mixer speed and add the powdered sugar gradually until all in and mixed. Return to high speed to mix thoroughly.
  3. Add the vanilla and mix thoroughly.
  4. (Note) If desired, you can add a couple of teaspoons of ground cinnamon to this and fold in to give it that cinnamony taste I love so well. Add as much or little as you like for your own taste.
  5. Top your Easy Pumpkin Muffins and enjoy!

I just love Streusel topping. This is wonderful through the holidays! It just adds to the flavor of the season! The later in the fall it gets the more we want spicy and cinnamony things! This stuff is always better served fresh and warm!

Ingredients for the Streusel topping

  • ½ Cup – all-purpose flour
  • ¼ Cup – brown sugar, packed
  • ½ Stick – unsalted butter
  • ½ Tsp – ground cinnamon
  • ½ Cup – chopped pecans (optional, if you like nuts)

Preparing the Streusel topping.

!! Do not use a mixer !!

  1. Add all the ingredients to a bowl and mix with a fork or wash your hands well and just mash it all together with your fingers until it is blended good.
  2. Add a teaspoon full to the top of each muffin before baking and pat it down on the batter. Notice, I said pat, not push it down into the batter. It needs to stay on top.
