Lemon Cream Bundt Cake 1

 

What a terrific cake, Lemon Cream Bundt Cake. This is a lemony dish that is going to please your taste buds. If you are a lemon lover or just like it some, this will certainly be a keeper for you.

Bundt Cakes have been around for a long time and we have made plenty of them and posted them here on our web site. Many different recipes have been posted here and we will include some of our other lemon recipes for you below this recipe for Lemon Cream Bundt Cake.



 Ingredients for: Lemon Cream Bundt Cake

  • 18 ozs lemon cake mix (Your choice brand) We like Betty Crocker and Pilsbur.
  • 3 ozs Instant lemon pudding
  • 4 – eggs (Large / extra large)
  • 1 – Cup sour cream
  • 2 – Teaspoons lemon extract (this is optional)
  • 1 lemon (juice of)
  • 1 lemon (zest of)
  • 1/2 cup oil

Note: Lots of folks still do not know what lemon zest is or how to make it. The zest is the colorful outer layer of the citrus peel.

How to make it: Always scrub and clean your product well using soap and water. In this case, a lemon. Rinse and dry well.

Directions for: Lemon Cream Bundt Cake

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in the list above in a large mixing bowl.
  3. Pour into your bundt pan
  4. Bake approx 35 minutes.
  5. Check to be sure it is done by inserting a toothpick into it. If it removes clean it is done.
  6. Invert on your cake server after cooling on a wire rack
  7. Add frosting and then garnish with your zest.

I have read that these cakes can be frozen for 30 days and still taste like you just baked them! I have not tried this. If you have please leave us some feedback.

Now comes the best part! I love the icing for a lemon cake! This icing for the Lemon Cream Bundt Cake is no different. This as the old adage goes is, The icing on the cake! 🙂

I pretty much like all lemon cakes but a lemon cake topped with this wonderful Lemon Buttercream Frosting is just gonna knock you out! Lemon on lemon, how much better can it get?

Ingredients for: Lemon Buttercream Frosting

  • 1 – Cup of unsalted butter (softened)
  • 3 – Cups of confectioners sugar
  • 1 – Teaspoon of vanilla Extract
  • 1 – lemon ( The zest and juice)(Set zest aside for garnishing)
  • pinch of salt (What you can hold between your forefinger and thumb.)




Directions for: Lemon Buttercream Frosting

  1. Add butter, sugar, and salt in a medium bowl and beat until light and fluffy (3-5 minutes, depending on desired consistency).
  2. Add vanilla extract, and lemon juice, beating until well combined.
  3. Pour over your Lemon Cream Bundt Cake, garnish with zest and enjoy, enjoy, enjoy!

Of course, you can add as much or as little icing as you like to this dessert! The below image is with much less icing applied.  We enjoy ours with heavy icing.
