Homemade Strawberry Buttercream Frosting Recipe

Buttercream Frosting is not a difficult frosting to make.  The recipe is not complicated and would be a good recipe for beginners to make.  So, if you want to let the kids help out with a frosting, this strawberry buttercream frosting would be a good one to invite them to help with.

Buttercream frosting is a a good frosting to use when you need a cake icing or icing for Cupcakes.  It is a very smooth frosting.

Ingredients for Strawberry Buttercream Frosting

  • 3 cups confectioners’ sugar
  • 1 Cup butter at room temperature
  • 1 teaspoon vanilla extract
  • 1 Cup of strawberries for Strawberry Puree
  • Juice of one Lemon (Approx 3 Tbsp)
  • 1 Dash of salt

To make strawberry puree you will need to cook your strawberries in order for them to be concentrate. This link is a recipe for “How to make Concentrated Strawberry Puree”.  Takes a little longer than this recipe call for but I think would be worth the effort.

You can puree them in a blender and use them but the flavor will not be concentrated.

Directions for Strawberry Buttercream Frosting

  1. Puree Strawberries in your blender and add to a heavy sauce pan.
  2. Bring to a boil over medium low heat and stirring often.
  3. Allow berries to boil down until they are reduced to approx half.
  4. This could take 20 minutes of so. Remove from heat.
  5. Cream together sugar and butter, adding 1 cup of sugar at a time.
  6. After first cup of sugar is blended add your vanilla extract and 2 Tbsp of Strawberry Puree.
  7. Add a dash of salt.
  8. Add lemon juice during the last blending of the frosting.
  9. Repeat this process until all the sugar is used.

This Frosting is shown two different ways on a strawberry cake made in a bundt cake pan. We love strawberries and anything strawberry is going to be interesting to us. You can frost the cake in any way you choose. Either way is going to be delightfully tasty!

If you want to experiment with this recipe try leaving ou 1/2 cup of sugar and add more strawberries for a more strawberry taste. This frosting works great on cupcakes as well.
