Oven Roasted Potatoes W/Garlic & Herbs

We here at Back Roads Living love potatoes and these Oven Roasted Potatoes are no exception! IF you look around our site you will find other potato recipes I am sure will delight you as much as this one will. Potatoes are just one of those vegetables that you can make so many different ways and still have a delicious dish. We really love re-fried potatoes but that is another recipe for another day!

We personally like the Mccormick brand seasoning but you can use whatever you like best.

Ingredients for: Oven Roasted Potatoes

1 Tsp Oregano Leaves (Your brand choice)
1 Tsp Paprika (Your brand choice)
1 Tsp Thyme Leaves
1 Tsp Sea Salt
1 Tsp Garlic Powder (Optional)
2 Pounds Baby Red Potatoes (Cut in quarters)
2 Tbsp olive oil

Instructions for: Oven Roasted Potatoes

Preheat oven to 425F.
Mix the following ingredients, oregano, paprika, thyme, sea salt and garlic powder in small bowl. Set this aside.
Toss the quartered potatoes with the oil in large bowl, be sure to coat them well.
Sprinkle seasoning mixture over potatoes you mixed together first..
Toss to coat well.
Spread potatoes in single layer on foil-lined baking pan. (Ours is a 15” X 10” This worked well)
Bake for 30 to 35 minutes or until potatoes are tender and golden brown.
Serve warm with any meal for a wonderful side dish.
