Banana Pancakes

Now, I love Banana Pancakes! This is a recipe I found lately that is flour free! Yes, flour free! You can use the oil or butter of your choice to fry them in but I like butter! These are a very tasty and delicious treat if you like banana flavor! We here at Back Roads Living like banana very much and eat them just about daily with our morning cereal! Not to mention, banana’s are a good source of potassium! Tasty and good for you too! Enjoy!

Try not to take up too much paper with this recipe. It is sooo easy and simple even I didn’t mess it up the first time.  Now, that says a lot! 🙂

Ingredients for : Banana Pancakes

  • 1 – Large Banana
  • 2 – Medium to large eggs

Directions for: Banana Pancakes

  1. Pre-heat a medium to large skillet with your choice of oil or butter.
  2. Slice the Banana into thin circles
  3. Break eggs and add banana’s and eggs in a medium bowl and mash the babana’s into the egg. Make sure they are incorporated well.
  4. Pour mix into pre-heated skillet and fry like any other pancakes.
  5. Serve warm with your choice of toppin. (I Like Peanut Butter)
