Blackberry Ice Cream ~ Ice Cream with Blackberries

I love Blackberry Ice Cream and this dish of Blackberries with Ice Cream is something that we blackberry lovers are all going to enjoy! It is coming time yet again that we will be able to get out and pick fresh Blackberries. I have for as long as I can remember, loved blackberries! They make the best cobblers. Go ahead and try this Blackberry Ice Cream now and you can anticipate the fresh blackberries when they come in!

Ingredients for: Blackberry Ice Cream

1 – Quart vanilla ice cream (Your favorite Brand)
1/2 Cup granulated sugar
1/4 Cup water
2 1/2 – Pints blackberries. (divided, fresh is best but frozen will work)
1 – Teaspoon lemon juice

Directions for: Blackberry Ice Cream

In a stainless or non corrosive saucepan, bring the sugar and water to a boil over medium heat.
Add 2 pints of the blackberries and stir to combine.
Cook this , stirring occasionally, until the berries break down, approx 7 – 8 minutes.
Put this in a blender and add the lemon juice.
Puree the berry mixture, then strain it through a fine-mesh sieve.
Cover the Blackberry puree and refrigerate until ready to serve.
When ready to serve, scoop the ice cream into bowls.
Drizzle with the blackberry sauce and top with a few of the remaining blackberries.
Add Ice cream in the center.
Serves approx 6 people.
