Canned Sweet Potato Casserole

This recipe for Canned Sweet Potato Casserole is a recipe I got from my mother. She has been a true Country Cook for many years. As we grew up she cooked nearly every meal from scratch! The opportunity of purchasing all the luxuries and pre-made foods were not afforded to us as we grew up poor but not deprived.

My dad always worked and provided for his family and always kept the bills paid and groceries on the table. I am very fortunate to have had two loving parents who took very good care of us as we grew up.

This is a favorite of mine and has been ever since I can first remember having it. This was one of those Sunday after Church dishes. It was a special occasion dish also! Sunday dinners and special occasions, you know, when someone is visiting were always the best meals! Always something special made and plenty of it!

This Canned Sweet Potato Casserole is so good! I have eaten many fresh sweet potato casseroles also but there are just times we cannot get fresh sweet potatoes and at these times we just have to make do with what we have. We have learned to do that over the years also. Make do with what we have, A good God given talent!

Ingredients for: Canned Sweet Potato Casserole

  • 3 – Cups of Canned Sweet Potatoes (mashed)
  • 1 1/2 Cup sugar
  • 1 Stick butter
  • 2 Large eggs (Farm fresh is best but store bought will do)
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 1 Cup Milk

Canned Sweet Potato Casserole
Directions for: Canned Sweet Potato Casserole

  1. Mix all the above ingredients together and whip until fluffy.
  2. Bake in Greased Casserole Dish
    for 20 minutes @ 400 degrees.

Topping for: Canned Sweet Potato Casserole

  • 1 Stick melted butter
  • 2/3 Cup Brown sugar
  • 1 Cup Crushed Corn Flakes
  • 1 Cup pecans, mashed up some. (You do not have to toast them but we like them toasted) (Toasted,“How to Toast Pecans in Butter”.)

Directions for Topping

  1. Mix all ingredients and top casserole

If you want Marshmallows spread evenly over topping and heat in broiler.

Canned Sweet Potato Casserole

Watch closely as this will brown and burn if not removed pretty quick.

Serve with a lot of love and care and it will not last long! Happy eating.
