Chocolate Peanut Butter Cupcakes

These Chocolate Peanut Butter Cupcakes are a delicious treat! We here at Back Roads Living like a little Peanut Butter with our Chocolate! Oh, and we love Peanut Butter with Banana’s also! Yes we love Reese Cups but sometimes we just like a little change! Plus, Reese Cups don’t have the same texture as a baked cake or muffin! There are just so many ways to make cupcakes and muffins and we seem to find a new way really often. People are so creative and for the most part they turn out really good and tasty! Go ahead and give it a try!

Ingredients for: Chocolate Peanut Butter Cupcakes

3 – large bananas, mashed
1/3 Cup white sugar
1 – Large egg (beaten)
½ Cup applesauce
1 – Teaspoon vanilla extract
½ Teaspoon cinnamon
1 – Cup whole wheat flour
½ Cup rolled oats
1 – Teaspoon baking soda
1 – Teaspoon baking powder
½ Teaspoon salt
2/3 Cup chocolate chips
Peanut butter (enough to place a small amount in the center of each Cupcake / Muffin)
Note: We just set the Peanut Butter jar out and dipped from it! 🙂

Directions for: Chocolate Peanut Butter Cupcakes

Preheat oven to 350.
Mash bananas, add sugar, egg, applesauce, vanilla, and cinnamon in a large bowl and mix well.
In a separate bowl mix flour, oats, baking soda, baking powder, and salt together and mix well.
Combine the two mixtures, add chocolate chips and stir well.
Grease a muffin pan or spray with non stick spray.
Spoon mix into the medium size muffin tin about ½ full. (We use liners)
Place a small amount of peanut butter on each (see note above).
Refrigerate leftover batter for another batch.
Bake for 20-25 minutes.
