Lemon Chicken

This is a skillet method for Baked Lemon Chicken I adapted from a recipe I found online. I love cooking/baking in Cast Iron. This delicious dish was another cast iron success! The wonderful thing about cooking like this is you can season and cook your whole meal in one skillet.  Try different vegetables and seasonings. It would be delicious with our Corn Bread Recipe. 

 Ingredients for: Skillet Lemon Chicken Baked

  • 4 Chicken Breast
  • 4 small – medium potatoes quartered
  • 1/4 Pound Green Beans (I used a Quart)
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1 Tsp Lemon Pepper
  • 6 Tbsp Olive Oil
  • 1/4 Cup Lemon Juice
  • 1 Lemon

Note: You can add Garlic or Onions if you like them. 1 Tbsp of Garlic Powder or one onion or both would be very good.

Directions for: Skillet Lemon Chicken Baked

  1. In a large Cast Iron Skilletor Baking Dish use 1 Tbsp Oil to coat the bottom.
  2. Slice Lemon into thin slices and cover the bottom with it.
  3. In a large Mixing Bowl, mix all the other, oil, Lemon Juice, salt, Pepper, and 1/2 Tsp Lemon Pepper.
  4. Put Chicken, Potatoes and Green beans in and toss well.
  5. Lay Chicken on Lemon slices and put the potatoes and Green Beans around the sides.
  6. Bake in Pre-Heated 400* oven for 50 – 60 minutes.
  7. Check after about 40 – 45 minutes and if the potatoes are brown enough cover with aluminum foil to keep them from getting too brown.

 Serve with our Corn Bread Recipe
