Recipe for Easy Loaded Baked Potato Casserole

This recipe for Loaded Baked Potato Casserole is no doubt one of the best down home dishes for potatoes! We here at Back Roads Living are not fancy chefs as some of those TV folks! they come up with all those fancy shmancy names that the majority of us do not understand anyway. 🙂

As I was looking around, I found this one and it looks delicious. This is a recipe for us to keep. The casserole will do us for several meals. Yes, we love to heat up leftovers! Potatoes are delicious when reheated! A dish like this would be wonderful with some scrambled eggs on the side when used as leftovers! We love scrambled eggs with potatoes!

Anyway, come on by and set a spell. You don’t have to get out any pencil or paper for this Loaded Baked Potato Recipe because you can just select the print button and print her off! You can disable the pictures and delete the paragraphs and only print the recipe herself! Isn’t that wonderful?

This recipe makes 12 – 14 servings! I can just imagine how many meals we can get out of this one!! With folks on a budget, this is a wonderful dish to make and keep over! My wife and I could eat on this baby all week! Potatoes are one of the most diverse foods you can buy. This is just one of many potato recipes we have and are going to post for you in the upcoming days and weeks ahead. 🙂

Ingredients for: Loaded Baked Potato Casserole

  • 2 1/2 – 3 lb of medium potatoes, peeled and cut into 1-inch chunks
  • 1 cup evaporated low fat milk (Use regular if you need to)
  • 1/2 cup light sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups (8-oz. pkg.) shredded 2% cheddar cheese, divided
  • 6 slices bacon, cooked and crumbled, divided (Use extra if you really like bacon. 8 – 10 pieces works well)
  • Sliced green onions (Fresh out of the garden is wonderful)

Directions for: Loaded Baked Potato Casserole

  1. Place the potatoes in a large saucepan.
  2. Cover with water and bring to a boil.
  3. Cook over medium-high heat for 15 to 20 minutes or until tender then drain.
  4. Preheat the oven to 350° F.
  5. Grease 3-quart casserole dish.
  6. In a large bowl, combine potatoes, evaporated milk, sour cream, salt and pepper.
  7. Beat with hand-held mixer (We like the the Kitchen Aid) until smooth.
  8. Stir in 1 1/2 cups cheese and half of bacon.
  9. Spoon mixture into prepared casserole dish.
  10. Bake for 20 to 25 minutes or until heated through.
  11. Top with remaining 1/2 cup cheese, remaining bacon and green onions.
  12. Bake for an additional 3 minutes or until cheese is melted.

Notes

This casserole can be assembled ahead of time and refrigerated. Cover with foil and bake at 350° F for 40 to 45 minutes or until heated. Uncover; top with cheese, bacon and green onions; bake for an additional 3 minutes or until cheese is melted.

Just like adding extra bacon, onions or cheese! I can hardly wait until I get his make and sink my teeth into it!
