Mini Grape Upside Down Cake

This Mini Grape Upside down Cake is a fruity and delicious dessert! Children love these so much. Just the right size and sprinkled with powdered sugar make it a delight to them!

Be sure to make lots of them as they will not last long. Once everyone gets a taste of these delicious mini cakes, they will be gone in a flash!

There are lots of ways to make grape cakes and many of them are used as coffee cakes since that are almost always small or mini cakes. They are delicious with coffee!

So, now that you understand they need to be made in bunches, lets get baking!

Ingredients for: Mini Grape Upside Down Cake

  • 1 Cup seedless grapes( Your choice)
  • 1/2 Cup apple jelly
  • 1 1/2 cups flour
  • 1/2 cup granulated sugar
  • 1 Tbsp Baking powder
  • 1/2 Tsp Salt
  • 1/2 Cup of chopped walnuts
  • 1 Cup milk
  • 4 Tbsp Butter
  • 1 Lg egg, beaten lightly

Note: Confectioners sugar for dusting!

Directions for: Mini Grape Upside Down Cake

  1. Pre-Heat oven to 400*
  2. Grease a 12 cup muffin pan and place 2 tsp apple jelly and a layer of grapes halves at on the bottom of each cup
  3. Whisk flour, granulated sugar, baking powder and salt in a large bowl and stir in the walnuts
  4. Whisk milk, butter and egg ina medium bowl
  5. Stir into the flour mixture until well mixed
  6. Divide the batter into each cup and bake until golden brown or a tooth pick inserted comes out clean. (Approx 15-20 min)
  7. Let cool and dust with confectioners sugar!
