Making Pumpkin Pancakes W/ Homemade Cinnamon Butter

Tasty and delicious Pumpkin Pancakes are so easy to make. There are several recipes for these but they vary very little. Pumpkin Pancakes served hot with Homemade Cinnamon Butter is going to be a delight! The cinnamon butter takes some effort but it will be well worth your effort if you give it a try!
If you are not into a lot of making your own syrup or butter topping, you can always run out and pick yourself up a bottle or Maple Syrup. This is also delicious on these Pumpkin Pancakes. If you have fresh pumpkins available you can Puree your own pumpkin and use this in the recipe. “How to make Pumpkin Puree”..

Ingredients For: Pumpkin Pancakes

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar (2 spoons of Brown Sugar is good also)
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 pinch clove (Optional)
  • 1 cup milk (Whatever you have on hand will do. 1%, or any will do)
  • 6 tablespoons canned pumpkin puree (Approx ⅓ Cup)(Use fresh if available)
  • 2 tablespoons melted butter
  • 1 egg (We use fresh! Store bought is fine)
  • 1/2 Cup lightly crushed Pecans (Optional)

There is not much better in the fall of the year than going to the pumpkin patch and getting your own pumpkin to make your own food. There are many Farmers Markets around most of us and this time of year they should be having some pumpkins there. Fresh pumpkin always taste better than canned. Adding you own spices to these pumpkin pancakes is going to make them so good and tasty! I just know you are going to love these served with homemade cinnamon butter or maple syrup! I can taste them now!

Directions For: Pumpkin Pancakes

  1. Add all wet ingredients to a Medium bowl and mix well. (Milk, Butter, Egg and Pumpkin)
  2. In a separate large bowl mix all you dry ingredients.
  3. Add the wet ingredients to the dry and stir until a good consistency is reached.
  4. Pre-heat a 10″ Skillet or Griddle lightly coated with oil.
  5. Add approx 1/4 cup of mix per pancake and heat on both sides until lightly browned.
  6. Serve hot with Homemade Cinnamon Butter or Maple Syrup!

Things You’ll Need for making Cinnamon Butter

Ingredients for: Cinnamon Butter

  • 1 cup of heavy whipping cream
  • 1 tsp. of ground cinnamon
  • 1/2 cup of honey
  • 1/2 cup of confectioner’s sugar

Optional Topping for: Cinnamon Glaze

Ingredients for Cinnamon Glaze Topping

  • 1/2 Stick butter (1/4 Cup)
  • 3 ounces cream cheese (Little less than 1/2 block)
  • 1 1/2 cups powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 3 to 4 tablespoons milk

Directions for: Cinnamon Glaze Topping

  1. In a small sauce pan melt butter over medium heat.
  2. Add cream Cheese and whisk together.
  3. As you whisk it will make a thick paste.
  4. Add the powdered sugar, vanilla extract and 2 tablespoons of the milk and whisk in.
  5. You need to be able to drizzle the glaze over the pancakes.
  6. If it’s too thick, add another tablespoon or two of milk.
