Pumpkin Spice Muffins

These Pumpkin Spice Muffins are a 2 ingredient recipe. This is the easy way to do it! We love homemade Pumpkin Pie here at Back Roads Living. The season is upon us and it is time to start thinking about entertaining. Many of us will have our friends over well before the holidays and we will need a sweet treat for them. This is a very easy recipe with homemade Streusel! If you like Pumpkin Pie and Cinnamon, you are gonna love this too!

Ingredients for: Pumpkin Spice Muffins

  • 1 Box Super Moist Spice Cake Mix by Betty Crocker (Mix of your choice) If you don’t like spice use yellow mix.
  • 1 15 oz Can of 100% pure Pumpkin. (This recipe used Libby’s but any brand will do)

Pumpkin Spice Muffins

Directions for: Pumpkin Spice Muffins

  1. Pre-Heat the oven to 350*
  2. Mix the two ingredients together and put in your muffin pan. Use the paper inserts for the best results. They come out so easy!
  3. If you don’t have the paper inserts be sure to spray your pan with non-stick spray. The ones with flour In them are really good.
  4. Add Streusel and gently pat into top of pumpkin spice muffin mix.
  5. Bake in Pre-Heated oven for 18-22 minutes. Keep a watch and when they turn golden brown they are done.

Ingredients for Streusel: Pumpkin Spice Muffins

  • ½ cup all-purpose flour
  • ¼ cup brown sugar, packed
  • ½ stick unsalted butter
  • ½ tsp ground cinnamon
  • ½ cup chopped pecans (optional)

Preparation for Streusel: Pumpkin Spice Muffins

  1. Combine all the ingredients in a bowl and mash the ingredients together using a fork, or just smoosh everything together with your fingers.
  2. Sprinkle over muffins or coffee cake immediately before baking.

** Note: Just soften the butter, do not melt it! **
