Roasted Garlic Vegetables with Meatloaf

Roasted Garlic Vegetables  is a delicious dish. We love Roasted Vegetables here at Back Roads Living. I guess you can tell from our post we love a lot of foods! This Roasted Vegetable dish served with our Meatloaf made in a Cast Iron Skillet is just about as country and delicious as it comes! Try it and see if you don’t like it! 🙂

Ingredients for: Roasted Garlic Vegetables

  • Potatoes
  • Carrots
  • Onions
  • Enough Olive Oil to coat! (Use your favorite Oil)

Note: Cut up enough of each to cover your pan. The pan you use is your choice. 9×8 baking or cast iron skillet! It doesn’t matter! Use what you like best!

Directions for: Roasted Garlic Vegetables

  1. Toss in Olive Oil in a large bowl
  2. Flavor with Rosemary
  3. Garlic Salt to taste
  4. Pepper to taste
  5. Roast at 400F for about 40 minutes
  6. (Use your favorite spices to taste)
