Slow Cooker Chicken & Wild Rice Recipe

We love this Slow Cooker Chicken & Wild Rice recipe! Here at Back Roads Living we also love using our Slow Cooker every chance we get! The slow cooker frees you up so much and when we get a chance to share a recipe that utilizes this small appliance, we are rarin’ to get it to you!

This Slow Cooker Chicken and Wild Rice recipe is going to be one of those that you can adjust to your own liking. Some folks don’t like chicken breast. If you are one of those, just substitute dark meat. That will work fine also. I can’t count the times I have eaten great recipes from the crock pots and slow cookers. What great appliances and how they save time and energy! We hope you enjoy the recipe below. Eat it hot and enjoy!

Ingredients for: Slow Cooker Chicken & Wild Rice Recipe

  • 1 lb boneless skinless chicken breast or chicken of your choice
  • 1 cup chopped onion –(Omit if you do no like onions.)
  • 1 (10 oz) can fat-free cream of mushroom soup
  • 4 tablespoons white cooking wine
  • 6 oz box long-grain and wild rice
  • 4 cups broccoli florets – (Use your favorite vegetable. It just taste better with broccoli.)
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon pepper

Directions for: Slow Cooker Chicken & Wild Rice Recipe

  1. Cut the chicken into one-inch pieces.
  2. Combine chicken, onion, soup, wine, and 1⁄2 cup water in a 3 to 4 quart slow cooker.
  3. Cover and cook on low six (6) hours or until chicken is tender.
  4. Cook rice according to package directions. Steam broccoli until just tender, about 4 to 5 minutes. Stir rice and broccoli into the chicken mixture at the end of cooking time; season with salt and pepper.
  5. Cover and cook until thoroughly heated, about 15 minutes.

Notes for: Slow Cooker Chicken & Wild Rice Recipe

You can prepare the rice and broccoli the night before. Then just stir it in and let it all heat for about 20 minutes before serving.
