Southern Fried Chicken 1

Here at Back Roads Living we are pretty much for anything fried! This Southern Fried Chicken Recipe is no exception! I have eaten fried chicken as far back as I can remember.

I can remember, especially on sundays and if we had company htis wasa favorite dish of my mothers! Oh my, sheewwww, she would doctor this stuff up and season it to perfection! She would put these chicken breast in her favorite Cast Iron Skillet and man oh man, this always ended up being one of the highlights of the entire dinner! Her fried chicken was always so crispy on the outside and delicious and moist on the inside! Yep, she was raised in the garden and farm cooking everything they grew including chickens!

ingredients for: Southern Fried Chicken Recipe

  • 4 boneless skinless chicken breasts (These will no doubt be from the store) Fresh is always better. 🙂
  • 2 cups of flour ( have been known to use 1 1/2 cups flour and 1/2 cup corn meal)
  • Just a pinch of pepper and salt
  • 2 large eggs
  • Season (We use Chicken Seasoning and love it)
  • Crisco Lard or your favorite oil. Use Olive oil, Peanut Oil, etc. Whatever you prefer! We like Crisco!

Directions for: Southern Fried Chicken Recipe

  1. In a large skillet, (We use cast iron) add a couple of large tablespoons of Crisco oil ( make sure the bottom is covered and it is standing in the skillet at least 1/8″) and heat on medium high heat, until a drop of flour sizzles when dropped into it.
  2. Place the eggs in a dish large enough to dip a breast in, and whisk slightly.
  3. Add the flour to another dish and add a pinch or two of salt and pepper and a couple of teaspoons of the seasoning of your choice, then stir to combine.
  4. When the oil is hot, Dip the chicken in the egg on both sides, then dredge in the flour on both sides.
  5. Add the chicken, to your skillet cooking 2 or all 4 at a time. (Depends on the size of your skillet)
  6. Cook until lightly golden on one side, about 5 to 8 minutes per side, flip over and cook for another 5 to 8 minutes.
  7. Remove and place on a plate.
  8. Eat and enjoy with your favorite veggies!
