
Baked Mashed Potatoes are a new twist for me. This delicious recipe is a item that is going to have to be utilized in our dinners through the holidays! there are many ways to get your potatoes to the point of mashing and some are:
The Crock PotMethod, 6 foil wrapped potatoes cut in half and pierced, put in your crock pot for 4 hours on high.
Traditional method of baking or broiling, Bake or broil until soft enough to mash.
Microwave method. Follow your microwave times chart.
Stove Top Boiling. (Cut potatoes up into cubes and allow to boil in a stock pot full of water until soft enough to mash)
Any of these methods will work, just use the one that is best fitted for you.
We like anything that works and cuts down on time without cutting down on the quality of taste in the food. None of the above methods should decrease the quality of these delicious Baked Mashed Potatoes.
Ingredients for: Baked Mashed Potatoes
- 6 medium Idaho Russet potatoes or potatoes of choice.
6-8 slices of bacon, crumbled (or 1/2 cup real bacon bits, fried is tastier)
4 oz Cream Cheese (your favorite brand is fine)
2 Tbsp of chives (or 1/4 c. mixture of chives and diced scallions)
1/2 Cup. Sour Cream
1/4 Cup. Butter (melted)
1 1/2 Cups grated cheddar cheese
1 tsp. Kosher salt (add more if you prefer, this is just what we use)
1/4 tsp. Pepper
Directions for: Baked Mashed Potatoes
- Once the potatoes have baked in the crock pot, oven microwave, etc. Half the halves and scoop out the potato meat into a large bowl. Set the skins aside. ( If you desire you can freeze the skins and serve as a side dish at a future meal.)
- In a large skillet over medium heat, fry the bacon until crispy.
Remove to a plate covered with a paper towels and allow grease to drain.
Allow to cool and then crumble half the strips into the potato mixing bowl.
Set the remaining bacon crumbles aside .
Manually mash and mix the potatoes and bacon crumbles using a fork.
Add the cream cheese, butter, and sour cream, and stir until combined and creamy.
Add the chives, 2 cups of the cheddar cheese, salt and pepper.
Stir until well combined.
- Transfer potatoes into a large buttered baking dish.
Top with the remaining cheese.
Bake approximately 30 minutes at 350 degrees until the top is golden brown and the potatoes are heated through.
Remove dish from oven and add the remaining bacon crumbles for garnish.
Serve immediately while hot
