Chocolate Mayonnaise Cake Recipe

 Chocolate Mayonnaise Cake? What? This was my initial response the first time I ever heard of a mayonnaise cake! I thought, how on earth could a mayonnaise cake be fit to eat? Mayonnaise, really? Come to find out, the mayonnaise is just to texture the cake. It makes it moister than a regular cake.
I guess the reason I initially had a negative thought about this cake was that I just could not imagine a cake tasting like mayonnaise. Now, don’t get me wrong, I love mayonnaise on and in a lot of things but cake? So, This cake does not taste like mayonnaise! It is a very moist cake and delicious. Go ahead, give it a try and let us know how it turns out for you!

Ingredients for: Chocolate Mayonnaise Cake

  • 1 Cup Your favorite brand Mayonnaise (There are those who swear by Hellman’s Mayonnaise to make this cake)
    1 Cup Granulated Sugar
    4 Tbsp Cocoa
    1 Cup Warm Water
    2 Tsp Baking Soda
    2 Cups Plain or Cake Flour (Sifted)(We use Ginger Evans but use your favorite)
    1 Tsp Vanilla

Directions for: Chocolate Mayonnaise Cake

1: In a large mixing bowl, mix mayonnaise, sugar, and cocoa until well blended.
2: In a medium bowl, stir Baking Soda into warm water stir well and add to mayonnaise, cocoa, and sugar mix.
3: Add flour and vanilla, stir well.
4: This batter will be thin.
5: Add batter to a 9 x 13 pan at least 2″ deep.
6: Put into preheated 350 degree oven
7: Bake 35 – 40 minutes. (Ovens vary so check at 30 minutes)
8: Check with toothpick for doneness.

NOTE: Remember all ovens do not bake the same!

We like the standard chocolate icing for this cake.

Some folks like to serve this with an old recipe called Seven Minute Frosting. I looked around on the internet and found this recipe for a seven-minute frosting. I have yet to use this but it sounded good so I am including it here. If you have to opportunity to use this or if you have used this seven-minute frosting in the past, please leave us some feedback so our readers can gather some insight on it.

Ingredients for: Seven Minute Frosting

(Will be more than enough for one cake, refrigerate extra to use later)

This icing was originally made for this particular Chocolate Mayonnaise Cake. 

  • 4 – Egg whites
    1 1/2 – Cups sugar
    1/4 – Cup water
    1 – Teaspoon cream of tartar
    1/8 – Teaspoon salt
    1 – Teaspoon vanilla

Directions for: Seven Minute Frosting

1: Combine egg whites, water, sugar, cream of tartar and salt in top of double boiler.
2: Set over simmering water and beat with an electric mixer for about 5 minutes
3: until soft peaks are formed.
4: Remove from heat and stir in vanilla.
5: Keep beating until frosting is stiff enough to spread. Use immediately.
6: Plenty enough to fill and frost a 2-layer Devil’s Food Cake.
