Chocolate Zucchini Cupcakes

As you probably know, here at Back Roads Living we like Zucchini and Squash. This Chocolate Zucchini Bread Cupcakes is delicious! This is another great idea for your Zucchini! We had bunches of it this year and have enjoyed it more that any other time! You can add a little butter or honey on top while it is still good and warm! 🙂

This Recipe makes approx 24 cupcakes

Ingredients for CHOCOLATE ZUCCHINI BREAD CUPCAKES

  • 2 Cups Sugar
  • 1 Cup Oil
  • 3 Eggs
  • 2 Tsp Vanilla
  • 3 Cups All Purpose Flour
  • 1 Tsp Salt
  • 1 Tsp Cinnamon
  • 1/4 Tsp Baking Powder
  • 4 Tbl Spoons unsweetened cocoa powder
  • 1 Tsp Baking Soda
  • 1 Tsp Grated Lemon Peel (Optional)
  • 2 Cups Grated Zucchini
  • Chopped walnuts or Pecans(Optional)
  • 2 Loaf Pans or Bundt Pan
  • 1 Cup mini chocolate chips divided

Directions for CHOCOLATE ZUCCHINI BREAD CUPCAKES

  1. Mix all wet ingredients thoroughly
  2. Mix all dry ingredients thoroughly
  3. Mix wet and dry ingredients together thoroughly

Note: Add Zucchini last.

  1. spoon into cupcake cups
  2. If using Pecans or Walnuts press nut into top of cupcake.
  3. Bake in pre-heated oven at 325* for between 45-50 minutes.
  4. When toothpick or butter knife inserted comes out dry Chocolate Zucchini Bread Cupcakes is done.
