Fried Zucchini

This summer we raised a garden full of Zucchini and we had fried zucchini all summer long and into the fall! Eventually, this stuff runs out. Our garden can only hold so many of these delicious vegetables! We paired many of them with summer squash and that is another delicious dish!

We used one small to medium size in our recipe. This size serves two.

Ingredients for: fried Zucchini and Onions

  • 1 Small to medium Zucchini
  • 1/2 cup flour
  • 1 egg lightly beaten
  • 2 tbsp water
  • 1 Tsp garlic powder or salt
  • 1 Tsp onion powder
  • 1 cup vegetable oil

I forgot to say that this dish is great with fried potatoes and corn bread! I can eat this until I get sick! Literally, if I didn’t watch myself I would eat way too much of it!

Directions for: Fried Zucchini and Onions

  • Mix egg, water, garlic powder and onion powder.
  • Put Flour in a separate bowl
  • Slice Zucchini into thin round disk
  • drop zucchini into the egg mixture and coat both sides
  • With a fork transfer to flour bowl and coat both sides
  • With fork transfer to heated skillet with oil
  • Fry until brown on both sides.
  • In separate skillet saute’ onions and add with zucchini and serve hot!

If you raise garden food you can save tons of money on food! This Fried Zucchini and Onions are delicious and make a great side dish! Right out of our garden! This can also be blanched and frozen for winter use. We ended up using or giving away most of ours through the summer. Maybe next year will be a bumper crop again and we will freeze a little for winter.

WE used a #10 Cast Iron Skillet to fry our Zucchini in! We love Cast Iron, the heat is so evenly distributed in it. Once you clean Cast Iron and season it, it is easily maintained.
